Cookie Pudding Salad

1 small box instant vanilla pudding
1 cup buttermilk
8 oz. tub Cool-Whip
1 pkg. of fudge stripe cookies

Mix pudding and buttermilk.  Add Cool-Whip and stir.  Crunch up cookies and add to mixture.  Refrigerate until ready to serve.

Mini Meatloaves

1 egg
3/4 cup milk
1 cup shredded cheddar cheese
1/2 cup quick cooking oats
1 tsp. salt
1 lb. ground beef

2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 tsp. mustard

Preheat oven to 350 degrees.  In a large bowl, combine the egg, milk, cheese, oats and salt.  Add the ground beef, mixing well.  Form the mixture into eight miniature meatloaves.  Place in a lightly greased 9X13 baking dish.
In a separate small bowl, combine the ketchup, brown sugar and mustard.  Stir thoroughly and spread over each loaf.
Bake uncovered at 350 degrees for 45 minutes.

Cinnamon Roll Cake

Cake:
3 cups flour
1/4 tsp. salt
1 cup sugar
4 tsp. baking powder
1 1/2 cups milk
2 eggs
2 tsp. vanilla
1/2 cup butter, melted

Topping:
1 cup butter, softened
1 cup brown sugar
2 T. flour
1 T. cinnamon

Mix everything together except for the butter.  Slowly stir in the melted butter and pour into a greased 9x13 pan.  Mix all topping ingredients together until well combined.  Drop evenly over the cake batter and swirl with a knife.  Bake at 350 for 30 minutes.

Glaze:
1 1/2 cups powdered sugar
4 T. milk
1 tsp. vanilla

Mix together and drizzle over warm cake.

Pumpkin Pie Playdough (not for eating)

5 1/2 cups flour
2 cups salt
8 tsp. cream of tartar
3/4 cup of oil
1 container (1.5 oz.) pumpkin pie spice
orange food coloring (2 parts yellow, 1 part red)
4 cups water

Mix all ingredients together.  Cook and stir over medium heat until all lumps are dissolved.  Knead the dough on a floured surface until smooth.  Store in an airtight container.

Hash Brown Potato Pie

5 eggs
1/2 cup milk
3 cups hash browns, partially thawed
2 T. minced onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups shredded Cheddar cheese, divided
8 - 10 strips bacon crumbled and divided

Grease a 9 inch pie plate.  Beat together eggs and milk.  Stir in potatoes, onion, salt and pepper.  Stir in 1 cup of cheese and all but 2 strips of bacon.  Pour into dish.  Bake at 350 degrees for 35 to 45 minutes or until center is set.  Sprinkle remaining cheese and bacon on top and bake for an additional 3 to 4 minutes or until cheese has melted.

Crockpot Pork Chops & Rice

6 - 8 lean pork chops, 1 inch thick
1/2 cup flour
1 T. salt
1 1/2 tsp. dry mustard
1/2 tsp. garlic powder
oil
2 (10 oz.) cans chicken rice soup

Mix dry ingredients.  Dredge pork chops in mixture.  Brown in oil in large skillet.  Place browned pork chops in crockpot.  Add cans of soup.  Cover and cook 6 - 8 hours.

Banana Muffins

3 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
2 cups sugar
1 cup vegetable oil
3 large eggs
1 T. vanilla
4 ripe bananas, peeled and mashed

Line 24 muffin cups with paper liners.  Preheat the oven to 325 degrees.

Whisk the flour, baking soda, salt, baking powder, cinnamon, and nutmeg in a medium bowl to blend.  Beat the sugar, oil, eggs, and vanilla in a large bowl to blend.  Stir in the banana.  Add the dry ingredients and stir until blended.

Divide the batter among the prepared muffin cups and bake for 25 minutes or until an inserted toothpick comes out clean.

Marbled Chocolate Bars

1 pkg. German chocolate cake mix
ingredients for cake mix
1 pkg. (8 oz.) cream cheese, softened
1/2 cup sugar
3/4 cup milk chocolate chips, divided

Prepare cake batter according to package directions.  Pour into a greased 15x10x1 inch baking pan.  In a small mixing bowl, beat cream cheese and sugar.  Stir in 1/4 cup chocolate chips.  Drop by tablespoons over batter.  Cut through batter with a knife to swirl the cream cheese mixture.  Sprinkle with remaining chocolate chips.  Bake at 350 for 25 minutes or until a toothpick inserted near the center comes out clean.

Cinnamon Sugar Bread

2 cups flour
1 T. baking powder
1/2 tsp. salt
1 cup sugar
1 egg, beaten
1 cup milk
1/3 cup vegetable oil

1/3 cup white sugar
2 tsp. ground cinnamon

Preheat oven to 350 degrees.  Lightly grease a 9x5 inch loaf pan.
In large bowl, combine flour, baking powder, salt and 1 cup sugar.
Add egg, milk, and oil to flour mixture.  Stir until just moistened.
Pour half of the batter into pan.  Sprinkle with cinnamon and 1/3 cup sugar.  Cover with remaining batter.  Top with more cinnamon and sugar if desired.  Bake for 45 to 50 minutes.  Let sit overnight & enjoy for breakfast!

Buttered Potatoes

3 medium potatoes, pared and thinly sliced
3/4 tsp. salt
1/8 tsp. pepper
3 T. butter

Preheat oven to 350 degrees.  Lightly grease a casserole dish (be sure it has a tight fitting lid).  Gently toss the potatoes with salt and pepper and place in dish.  Dot with butter.  Cover and bake for 45 - 50 minutes.

No Bake Peanut Butter & Chocolate Bars

1/2 cup margarine
1/2 cup packed brown sugar
1 tsp. vanilla
2 cups peanut butter
2 1/2 cups powdered sugar
2 cups semisweet chocolate chips

Place all ingredients except the chocolate chips in a large microwave safe bowl.  Microwave until butter and peanut butter are melted. (1 - 2 minutes)
Remove from microwave and stir ingredients until mixed well.  Pat into a 9x13 pan.
Pour chocolate chips into another microwave safe bowl and microwave at 30 second intervals, stirring after each, until completely melted.  Spoon over top of peanut butter mixture and spread evenly.
Allow to cool completely until chocolate hardens.

K-Dog's Manwiches

1 lb. Italian sausage
1 lb. ground beef
1 tsp. salt
1 tsp. pepper
1 tsp. garlic powder
1/2 tsp. red pepper flakes
30 oz. pizza sauce
french bread or sub buns
mozzarella cheese slices

Brown sausage and ground beef together.  Drain.

Mix the salt, pepper, garlic powder and pepper flakes into the pizza sauce.  Put the browned meat and the seasoned sauce in the crock pot and stir to combine.  Cover and cook on low for 4 hours or on high for 1-2, stirring once or twice  during cooking.

Preheat oven to 375 degrees.  Cut french bread into smaller buns or use buns.  Pull a small amount of bread out of the bottom of the buns to make a bowl for the meat.  Fill the bowl with meat mixture.  Cover the meat with a mozzarella cheese slice.  Place the top of bun onto sandwich and wrap the entire thing in foil.  Bake for 15 minutes in the oven and serve.

Apple Crisp - Kylee's Favorite!

sliced, peeled apples
4 T. sugar
1 cup regular rolled oats
1 cup packed brown sugar
1/2 cup flour
1/4 tsp. cinnamon
1 cup margarine
1/4 to 1/2 cup chopped nuts or coconut, optional

Place fruit in baking dish.  Stir in sugar.
For topping, combine oats, brown sugar, flour and cinnamon.  Cut in margarine till mixture resembles coarse crumbs.  Stir in nuts or coconut.  Sprinkle topping over filling.
Bake for 30 to 40 minutes at 375 degrees or till fruit is tender and topping is golden.

Oven Fries

3 large baking potatoes
1 1/2 tsp. salt
1/4 to 1/2 tsp. pepper
1 T. white sugar
1 T. vegetable oil

Wash, dry and cut your raw potatoes into large pieces (steak fry size). Place cut potatoes into a large ziploc bag. Add vegetable oil, salt, pepper and sugar. Seal closed and shake until all potato pieces are completely coated. Cover a baking sheet with foil and place potatoes onto your lined baking sheet. Bake at 450 degrees for about 30 minutes or until fries are tender.

Crockpot BBQ Chicken Sandwiches

5-6 chicken breasts
1 - 18 oz. bottle of BBQ sauce (I used Kraft Honey BBQ.)
1/2 cup brown sugar
3/4 cup Italian dressing
2 T. worcestershire sauce

Place the chicken in your crockpot. In a bowl mix the BBQ sauce, brown sugar, Italian dressing and worcestershire sauce together. Pour over chicken and set on low for 6 - 8 hours or on high for 3 - 4 hours. Once the chicken is tender, shred with a fork. Enjoy on fresh buns.

Angel Bars

16 oz. pkg. Angel food cake mix
21 oz. can light cherry pie filling

Combine cherry pie filling with dry cake mix. Pour into a greased jelly roll pan and bake at 350 for 20 minutes. Dust with powdered sugar if desired.

Cheerio Bars

1 cup corn syrup
1 cup sugar
1 cup peanut butter
5 to 6 cups Cheerios

Measure corn syrup and sugar into large saucepan. Cook over medium heat, until sugar dissolves and mixture begins to boil. Remove from heat. (This can also be done in the microwave.) Stir in peanut butter. Mix well. Add Cheerios. Stir until well coated. Press mixture into 9x13 greased pan.

Kaden's Costa Rican Orange Pound Cake

1 pkg. yellow cake mix
3 oz. pkg orange Jello
3/4 cup orange juice
3/4 cup oil
6 large eggs

Mix all together and bake at 325 degrees for 40 minutes in two greased loaf pans (or possibly a bundt pan).

Glaze:
3/4 cup orange juice
2 cups powdered sugar

Mix and pour over warm cake.

Mini Chocolate Chip Pancake Muffins

1 cup flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 T. sugar
2/3 cup buttermilk
1 egg
2 T. maple syrup
2 T. melted butter
1/2 cup milk chocolate chips

Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Mix together with a wire whisk. In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined. Add wet ingredients to dry ingredients and stir with a spoon until combined. Stir in chocolate chips. Reserve a few chips to sprinkle on the tops. Bake for 8 - 9 minutes. Makes 24 mini pancake muffins.

Let cool slightly and remove from the pan. Serve immediately. Feel free to dip muffins in your favorite pancake topping - melted butter, syrup or powdered sugar.

Pecan Pie Muffins

1 cup packed brown sugar
1/2 cup flour
1 cup chopped pecans
2/3 cup softened butter
2 eggs beaten

In a medium bowl, stir together brown sugar, flour and pecans. In a separate bowl, whisk the butter and eggs together until smooth. Stir into the dry ingredients just until combined. Spoon the batter into greased muffin cups (about 2/3 full). Bake for 20 to 25 minutes.

Yields 8 muffins

Rhubarb Breakfast Cake

1/2 cup butter flavored shortening
1 1/2 cups sugar
1 egg
2 cups flour
1 tsp. baking soda
1 cup buttermilk
1 1/2 cups finely chopped rhubarb

Topping:
1/2 cup packed brown sugar
1/4 cup flour
1 tsp. ground cinnamon
3 T. cold butter

In a large bowl, cream shortening and sugar until light and fluffy. Add egg; beat well. Combine flour and baking soda; add to creamed mixture alternately with buttermilk. Fold in rhubarb. Transfer to a greased 9x13 baking pan. In a small bowl, combine topping ingredients, cutting in the butter until crumbly. Sprinkle over batter.
Bake at 350 degrees for 35 minutes.

Frozen Fruit Cups

6 bananas, sliced
1 – 20 oz crushed pineapple in own juice, use juice
2 cups mandarin oranges, chopped and drained
1 large can sliced peaches, cut up with juice
OR package of frozen strawberries
1 – 6 oz can frozen orange juice (No Water)
Combine above fruits and add orange juice.
Add 1 30 oz bottle Diet or Regular 7-Up.
Put in individual plastic cups.
Freeze. Take out as needed and thaw slightly.

Pie Filling Fruit Salad

1 can cherry pie filling
1 can crushed pineapple
1 large container Cool Whip
1 can sweetened condensed milk
2 to 3 cups mini marshmallows

Combine Cool Whip and sweetened condensed milk. Add pie filling, crushed pineapple, and marshmallows. Stir until combined. Chill until serving.

Upside Down German Chocolate Cake

1 german chocolate cake mix, prepared according to box directions
1 cup coconut
2 cups chopped pecans
1 cup melted butter
3 1/2 cups powdered sugar
8 oz. cream cheese

Spread greased 9x13 pan with coconut and chopped pecans.
Prepare german chocolate cake mix according to directions and pour over nuts and coconut.
Mix melted butter, powdered sugar and cream cheese together and pour over cake.
Swirl with knife and bake at 350 degrees for 1 hour.

Jelly Doughnut Muffins

1 3/4 cup flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground nutmeg
1/4 tsp. ground cinnamon
3/4 cup sugar
1/3 cup oil
1 egg, slightly beaten
3/4 cup milk
12 tsp. jam or jelly
1/4 cup melted butter or margarine
1/4 cup sugar
1 tsp. cinnamon

In a large bowl combine flour, baking powder, salt, nutmeg, and cinnamon. Combine sugar, oil, egg and milk; stir into dry ingredients just until moistened. Fill greased or paper lined muffin cups half full. Place 1 teaspoon jam or jelly on top. Cover jam with enough batter to fill muffin cups 3/4 full. Bake at 350 degrees for 20-25 minutes or till done. Brush tops of muffins with melted butter and sprinkle generously with cinnamon-sugar. Serve warm. Make 1 dozen.

Ham Balls

3 lbs. ham loaf (Fareway)
2 eggs
1 1/2 cups crushed graham cracker crumbs
(one sleeve of crackers crushed)
1 cup milk

Sauce:
1 can tomato soup
1 tsp. dry mustard
1/4 cup vinegar
3/4 cup brown sugar

Mix ham loaf, eggs, graham cracker crumbs and milk. Roll into 2 inch balls and place in a 9x13 pan. Stir together sauce ingredients and spoon over meat balls. Bake at 350 for 1 hour and 15 minutes.

No Bake Cookies

2 cups sugar
1 stick margarine or butter
3 T. cocoa powder
1/2 cup milk
1/2 cup peanut butter
1 tsp. vanilla
3 cups oatmeal

Mix the sugar, margarine, cocoa, and milk in a medium saucepan. Boil for 1 minute. Add the peanut butter and vanilla. Mix quickly until the peanut butter melts, then add the oatmeal and mix until well blended. Drop spoonfuls on wax paper. Allow to set and cool completely.

Makes approximately 2 dozen 3-inch cookies.

Oreo Pudding

Mix together:
1 small box instant vanilla pudding
2 cups milk

Add 8 oz. Cool Whip
Then crush 6 -8 oreos and mix into pudding mixture.
Refrigerate at least a couple hours.
Before serving add crumbled oreos for garnish.

Waffles

1 3/4 cup all-purpose flour
1 T. baking powder
1 1/2 T. sugar
1/4 tsp. salt
1 3/4 cups milk
2 beaten egg yolks
1/2 cup oil
1 tsp. vanilla
2 egg whites whipped until stiff

Separate egg whites from yolks. In a large mixing bowl combine flour, baking powder, sugar and salt. Create a well in the center and pour milk, beaten egg yolks, oil and vanilla. Mix gently, just until combined. Beat eggs whites until stiff with electric mixer. Fold stiffened egg whites into mixture. Batter will be lumpy. Pour batter into preheated waffle (or belgian waffle) iron. Bake until desired color according to settings on waffle iron. ENJOY!
Makes 10-12 begium waffles or 12-14 regular waffles.

Banana Bread

1 pkg. yellow cake mix
1 box Banana Cream or Vanilla flavor instant pudding
4 eggs
1 cup water
1/4 cup oil
3 mashed fully ripe bananas
1/2 cup chopped walnuts (optional)

Beat first 5 ingredients in large bowl with mixer 2 minutes or until well blended. Add bananas and nuts; mix just until blended. Pour into 2 greased loaf pans and bake 50 - 60 minutes at 350 degrees.

*5 mini loaf pans can be used instead of 2 regular ones. Bake for 40 minutes.

Stuffed Pizza Bites

1 roll refrigerated pizza dough
pizza toppings of your choice
mozzarella cheese
1/2 tsp. garlic powder
1 tsp. Italian seasoning
parmesan cheese
1 T. melted butter
marinara or pizza sauce

Preheat oven to 400 degrees.
Unroll pizza dough so it's about 12" by 8" and cut into 24 squares. Place cheese and desired topping on each square (not the sauce though). Then carefully lift up each square and wrap the dough around the toppings. Pinch to make sure each ball is sealed shut and then place them seam side down in a lightly sprayed pie pan.
Brush the tops of the dough balls with melted butter and then sprinkle with the garlic and Italian seasoning and parmesan cheese.
Bake at 400 for 15 to 20 minutes. Sever with warmed marinara/pizza sauce on the side for dipping.

Chicken Noodle Soup

8 cups water
1 cup uncooked fine egg noodles
2 carrots, diced
2 celery stalks, diced
1 1/2 T. chicken-flavored bouillon
1/2 tsp. black pepper
1/4 tsp. dried thyme
1/8 tsp. celery seeds
1/8 tsp. garlic
2 bay leaves
4 T. minced onion
3 cups diced, cooked chicken

Put all ingredients into large pot, except chicken. Bring to boil. Cover and reduce to simmer for 15 - 20 minutes. Remove bay leaves and stir in chicken. Simmer or an additional 5 - 10 minutes.
