Cheesy Beef Stroganoff

1 lb. ground beef
2 cups water
3 cups medium egg noodles, uncooked
1/2 lb. Velveeta, cut into 1/2-inch cubes
1 can condensed cream of mushroom soup
1/4 tsp. black pepper

Brown meat in large skillet, drain.  Stir in water; bring to boil.  Stir in noodles; cover.  Simmer on medium-low heat for 8 minutes or until noodles are tender.  Add Velveeta, soup and pepper; cook 5 minutes or until Velveeta is melted and mixture is well blended, stirring frequently.

Homemade Vanilla Ice Cream

2 1/2 cups sugar
6 eggs

2 cans evaporated milk
2 pints half & half milk
1 1/2 tsp. vanilla

1/2 gallon 2% milk

Beat together sugar and eggs well.  Add evaporated milk, half & half milk, and vanilla.  Mix well.  Pour into ice cream freezer and add 2% milk to the "fill line" on container.  Stir.  Continue according to freezer directions.

Doggy Treats

4 (4 ounce) jars chicken and vegetable baby food
1 cup powdered milk
2 cups wheat germ

Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.
Combine all ingredients and stir until well blended.  Roll into small balls and place on a prepared baking sheet.  Using a fork, flatten each ball slightly.  Bake for 15 minutes or until browned.  Let cool on pan for 2 minutes.  Cool completely.  Store in an airtight container in the refrigerator or freeze.

Nadene's Cheese Spread

Mix in large bowl:
2 1/4 cups Mayo
1 T. sugar
1 tsp. Accent
1/2 tsp. garlic powder

Add:
8 oz. of each of the following shredded cheeses:
Velveeta
Cheddar
Swiss or Mozzarella

Put in refrigerator for about 2 hours before serving with crackers (and Mt. Dew :) )

Roaster Lasagna


4 lbs ground beef, browned &drained
1 ½ lbs  Fareway No Boil Lasagna Noodles
4 – 24 oz cans Hunts original spaghetti sauce
1 – 24 oz can Hunts garlic & herb spaghetti sauce
1 – 15 oz can pizza sauce
1 – 15 oz can tomato sauce
3 eggs
1 (12 oz.) carton cottage cheese
1 (12 oz.) carton ricotta cheese
1 cup parmesan cheese
2 cups shredded colby jack cheese
4 cups shredded mozzarella cheese

Spray roaster pan generously with PAM, double coat corners and sides of roaster. Brown the ground beef and drain well. In large pot, mix spaghetti sauce, pizza sauce, tomato sauce and hamburger. Cook this mixture to boiling. In separate bowl combine eggs, cottage cheese, ricotta cheese, and parmesan cheese.

Layer in roaster as follows:
Meat & Sauce Mixture – just barley coat bottom of pan
No Boil Noodles
Cheese mixture – drop by spoonfuls and spread
Meat & Sauce Mixture – about 1/3 of the remaining mixture
Shredded Cheese
No Boil Noodles
Cheese Mixture – drop by spoonfuls and spread
Meat & Sauce Mixture – about ½ of remaining mixture
Shredded Cheese
No Boil Noodles
Cheese Mixture – all of remaining mixture
Shredded Cheese

Cook  in roaster @ 400 for 15 minutes, then turn down to 350 for 30 minutes.                                                                        Let stand for 15 minutes before serving.

If you choose, you can add 2 cups additional shredded cheese on top and let it melt before serving.

This recipe makes approx. 30 servings.


Cook your French bread in a roster too. Cut, butter and season bread slices. Arrange slices back into a loaf and lay on foil. Do not completely close the foil around the loaf – leave the top open. Cook at 400 for approx. 10 minutes or until middle of loaf is warm and top is lightly browned. Three loaves fit in on roaster in this manner.

Funfetti Cake Batter Chow

5 cups Chex cereal
10 oz. (5 squares) vanilla flavored Almond Bark
1 1/2 cups Funfetti cake mix (any kind of cake mix should work)
1/2 cup powdered sugar
1 tsp. vegetable shortening (optional)

Melt Almond Bark according to package directions, adding vegetable shortening to thin.  Pour the cereal into a large bowl and drizzle with the melted Almond Bark.  Mix gently.  Dump the cake mix and powdered sugar onto the cereal and mix gently until all the cereal is evenly coated.  Warning - it is very addicting!

Blueberry Brunch Cake

Cake:
1 cup margarine or butter, softened
1 3/4 cups sugar
1 tsp. vanilla
4 eggs
3 cups flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg (optional)
1 (21 oz.) can blueberry fruit pie filling

Glaze:
1 1/4 cups powdered sugar
1 T. margarine or butter, softened
2 to 3 T. lemon juice or 1 tsp. vanilla

Heat oven to 350.  Grease 15x10x1 inch or 9x13 baking pan.  In large bowl, combine margarine, sugar and vanilla.  Add eggs 1 at a time, beating well after each addition.  By hand, stir in flour, baking powder and salt; mix well.  Spread half of batter in greased pan.  Stir nutmeg into blueberry filling; spread filling evenly over batter.  Drop remaining batter by teaspoonfuls over filling.
Bake at 350 for 30 to 40 minutes.
In a small bowl, blend all glaze ingredients, adding enough lemon juice for desired drizzling consistency.  Drizzle over warm cake.

French Toast Bake (Texas Toast)

1/2 cup melted butter or margarine
1 cup brown sugar
1 loaf Texas toast
4 eggs
1 1/2 cups milk
1 tsp. vanilla
powdered sugar for sprinkling

Melt butter in microwave and add brown sugar, stir until mixed.  Pour butter/sugar mix into bottom of 9x13 pan, spread around.  Beat eggs, milk and vanilla.  Lay single layer of Texas Toast in pan.  Spoon 1/2 of egg mixture on bread layer.  Add 2nd layer of Texas Toast, spoon on remaining egg mixture.  Cover and chill in fridge overnight.  Bake at 350 for 45 minutes.  Sprinkle with powdered sugar.  Serve with maple syrup if desired.

Cheesy Grilled Potatoes

3 large potatoes, cut into 1 inch cubes
1 T. minced onion
3 T. grated Parmesan cheese
1/2 tsp. seasoned salt
1/4 tsp. pepper
2 T. butter or margarine
5 slices crumbled cooked bacon
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese

In a large bowl, combine the first five ingredients.  Transfer to a double thickness of greased foil.  Dot with butter.  Fold foil around potato mixture and seal tightly.  Grill, covered, over medium heat for 15 minutes on each side or until potatoes are tender.  Carefully open foil.  Sprinkle the bacon and cheeses over potato mixture.  Grill 3 - 5 minutes longer or until cheese is melted.

Snickerdoodle Muffins

1 cup butter or margarine, softened
2 cups sugar
1/2 tsp. salt
2 tsp. cinnamon
3 eggs
1 tsp. vanilla
3/4 cup sour cream or greek vanilla yogurt
1 tsp. baking powder
2 1/2 cups flour
1 pkg. Hershey's cinnamon chips

3 T. sugar
3 tsp. cinnamon


Cream butter, sugar, salt and cinnamon until fluffy.  Add eggs and mix well.  Add vanilla and sour cream, mix well.  Add baking powder and flour; mix well until all combined.  Stir cinnamon chips into batter.  Spoon batter into 24 muffin cups.  Mix 3 T. sugar and 3 tsp. cinnamon together and sprinkle over the batter in each muffin cup.  Bake at 350 for 20 minutes.

This recipe can also be baked in 4 mini loaf pans for 35 to 40 minutes or 2 large loaf pans for 60 to 70 minutes.

Mom's Hot Fudge Sauce

1/2 cup butter or margarine
3 cups sugar
1 large can condensed milk (Carnation or Pet)
4 squares or 4 ounces unsweetened chocolate
1/2 tsp. salt

Melt butter or margarine.  Add the chocolate slowly, stirring in well until melted.  Then add the sugar and salt.  Lastly, add the condensed milk, stirring all the time.  Heat thoroughly but do not boil.  Serve on ice cream or any dessert.

Kylee's Mints

2 ounces cream cheese
2+ cups powdered sugar
1 drop coloring
1 drop flavoring

Work powdered sugar and cream cheese together with spoon or hands.  Add coloring and flavoring.  Make into balls.  Roll the balls in granulated sugar.  Press in mold, then pop out of mold.  Let set in refrigerator.  (Can also be rolled out and cut with small cookie cutters.)  Enjoy!

Cake in a Cup

1 box cake mix - any flavor
1 box Angel Food cake mix

Mix cake mixes together.  Store the mixture in an airtight container until you get the urge for dessert.  Then put three tablespoons of the dry mixture in a large mug and stir in two tablespoons water.  Microwave it for one minute and enjoy.

Lite Strawberry Cupcakes

1 package strawberry cake mix
1 12 ounce Diet 7-Up

Mix together and bake as directed.  Let cool and top with Light Cool Whip.

Sunday Chicken & Rice

boneless skinless chicken breasts
2 cups Minute Rice
1 pkg. onion soup mix
1 can cream of chicken soup
1 can cream of celery soup
1 can of water

Mix together soups, 1 can of water and rice (uncooked).  Pour into a buttered casserole dish.  Lay chicken breasts on top of rice mixture and sprinkle onion soup mix on top.  Cover with foil.
If going to church (or going to be gone for a few hours) bake at 250 for 3 hours; otherwise bake at 350 for 1 to 1 1/2 hours.

Monkey Bread

2 cans (10 count) refrigerated biscuits
1/3 cup butter or margarine
1 1/2 tsps. cinnamon
3/4 cup brown sugar
1 tsp. vanilla

Cut each uncooked biscuit into 4 pieces and place half in a greased loaf pan.  In a saucepan, heat to a boil, the butter, cinnamon and brown sugar.  Remove from the heat and add the vanilla.  Pour some of the mixture on the biscuit pieces and then add the rest of the remaining biscuit pieces.  Pour the remaining sugar mixture on top.  Bake at 350 for 25-30 minutes.

Butterscotch Bars

1/2 cup butter or margarine, melted and slightly cooled
2 cups self-rising flour
1 3/4 cup brown sugar, packed
2 eggs, beaten
1 tsp. vanilla
1 cup butterscotch chips

In a large bowl, combine melted butter, flour, brown sugar and eggs; mix well.  Stir in vanilla and butterscotch chips.  Spread in a greased 9x13 baking pan.  Bake at 350 for 20 to 25 minutes.

Vanilla Pineapple Salad

1 pkg. french vanilla instant pudding
1 - 8 oz. tub of Cool-Whip
1 can crushed pineapple, drained
1 - 2 cups mini marshmallows (optional)

Mix pudding according to package directions.  Fold in crushed pineapple and Cool-Whip.  Chill.

White Puff Paint

For each child, fill a dixie cup 2/3 full of shaving cream, a good squeeze of white school glue, and a good squeeze of white paint.  Let the child stir until mixed with a small craft stick.  Then have fun creating.  (Dark construction paper works best to paint on.)

Beefburgers

1 lb. ground beef, browned and drained
1/2 cup water
1 T. apple cider vinegar
1 package dry onion soup mix
1/2 cup ketchup
1 T. mustard
1/2 tsp. garlic powder
shredded cheddar cheese or cheese slices

Brown and drain ground beef.  Add water, vinegar, onion soup mix, ketchup, mustard and garlic powder.  Stir to combine and simmer over low heart.  Serve on buns or fried flatbread.  Top meat mixture with cheese.

Easy Fudge Bars

1 box white cake mix
2 eggs
1/3 cups oil
1 can sweetened condensed milk
1 cup milk chocolate chips
1/4 cup butter, cubed

In a bowl, combine the dry cake mix, eggs and oil.  Press 2/3 of the mixture into a greased 9x13 pan.  Set remaining mixture aside.
Combine sweetened condensed milk, chocolate chips and butter, cook and stir until smooth.  Pour over the crust.  Drop small spoonfuls of the remaining cake mixture over the top.
Bake at 350 for 19 minutes or until lightly browned.  Do not over-bake; the middle should remain soft.

3 Packet Roast

1 packet of Brown Gravy mix
1 packet of Italian Seasoning mix
1 packet of Ranch Dressing mix
1 1/2 cups water
2 - 3 lb. Rump Roast

Place the roast in your crock pot.  Dump all of your seasoning packets on top of the roast, and then pour your water around the roast.  Cook on Low for 9 - 10 hours.
Serve with mashed potatoes as it will make a delicious gravy!

Party Snack Mix

9 cups cereal
1 cup mixed nuts
1 cup pretzels
1 cup bagel chips
6 T. margarine
2 T. Worcestershire sauce
1 1/2 tsp. seasoned salt
3/4 tsp. garlic powder
1/2 tsp. onion powder

In large microwavable bowl, mix cereal, nuts, pretzels and bagel chips; set aside.  In small microwavable bowl, microwave butter until melted.  Stir in seasonings.  Pour over cereal mixture; stir until evenly coated. Microwave mixture for 5 - 6 minutes; thoroughly stirring every 2 minutes.  Cool and store in airtight container.

Peanut Butter Brownies

1 pkg. brownie mix
2 eggs
1/3 cup vegetable oil
1/4 cup water
1 cup chopped roasted peanuts (Chad's half only :-) )
1 14. oz can sweetened condensed milk
1/2 to 3/4 cup creamy peanut butter

Preheat oven to 350 degrees.  Lightly grease a 9x13 baking pan.  In a large bowl, combine brownie mix, eggs, oil and water.  Stir until combined.  Stir in peanuts if desired. Spread half of the brownie mixture into prepared pan.  In a small bowl, stir together sweetened condensed milk and peanut butter until smooth.  Spread mixture evenly over the brownie mixture in the pan.  Pour remaining brownie mixture on top.  Bake for 25 minutes.

Italian Chicken & Potatoes

4 boneless, skinless chicken breasts
1/2 to 3/4 cup Italian salad dressing
1 tsp. Italian seasoning
1 cup shredded Italian cheese (mozzarella/parmesan combo)
5 to 6 medium potatoes, cut into wedges or thick slices

Grease crock pot well.  Place chicken in bottom of crock pot and sprinkle with half of the Italian dressing, spice and cheese.  Put the potatoes on top and sprinkle with the rest of the dressing, spice and cheese.  Cook on low for 6 - 8 hours or until the chicken is done and potatoes are tender.

Brown Sugar Dip

1 pkg. reduced fat cream cheese (room temperature)
1/4 cup white sugar
3/4 cup brown sugar
1 tsp. vanilla

Mix together and store in refrigerator.
Serve with fruit.
