Snickerdoodle Muffins

1 cup butter or margarine, softened
2 cups sugar
1/2 tsp. salt
2 tsp. cinnamon
3 eggs
1 tsp. vanilla
3/4 cup sour cream or greek vanilla yogurt
1 tsp. baking powder
2 1/2 cups flour
1 pkg. Hershey's cinnamon chips

3 T. sugar
3 tsp. cinnamon


Cream butter, sugar, salt and cinnamon until fluffy.  Add eggs and mix well.  Add vanilla and sour cream, mix well.  Add baking powder and flour; mix well until all combined.  Stir cinnamon chips into batter.  Spoon batter into 24 muffin cups.  Mix 3 T. sugar and 3 tsp. cinnamon together and sprinkle over the batter in each muffin cup.  Bake at 350 for 20 minutes.

This recipe can also be baked in 4 mini loaf pans for 35 to 40 minutes or 2 large loaf pans for 60 to 70 minutes.

Mom's Hot Fudge Sauce

1/2 cup butter or margarine
3 cups sugar
1 large can condensed milk (Carnation or Pet)
4 squares or 4 ounces unsweetened chocolate
1/2 tsp. salt

Melt butter or margarine.  Add the chocolate slowly, stirring in well until melted.  Then add the sugar and salt.  Lastly, add the condensed milk, stirring all the time.  Heat thoroughly but do not boil.  Serve on ice cream or any dessert.

Kylee's Mints

2 ounces cream cheese
2+ cups powdered sugar
1 drop coloring
1 drop flavoring

Work powdered sugar and cream cheese together with spoon or hands.  Add coloring and flavoring.  Make into balls.  Roll the balls in granulated sugar.  Press in mold, then pop out of mold.  Let set in refrigerator.  (Can also be rolled out and cut with small cookie cutters.)  Enjoy!

Cake in a Cup

1 box cake mix - any flavor
1 box Angel Food cake mix

Mix cake mixes together.  Store the mixture in an airtight container until you get the urge for dessert.  Then put three tablespoons of the dry mixture in a large mug and stir in two tablespoons water.  Microwave it for one minute and enjoy.

Lite Strawberry Cupcakes

1 package strawberry cake mix
1 12 ounce Diet 7-Up

Mix together and bake as directed.  Let cool and top with Light Cool Whip.

Sunday Chicken & Rice

boneless skinless chicken breasts
2 cups Minute Rice
1 pkg. onion soup mix
1 can cream of chicken soup
1 can cream of celery soup
1 can of water

Mix together soups, 1 can of water and rice (uncooked).  Pour into a buttered casserole dish.  Lay chicken breasts on top of rice mixture and sprinkle onion soup mix on top.  Cover with foil.
If going to church (or going to be gone for a few hours) bake at 250 for 3 hours; otherwise bake at 350 for 1 to 1 1/2 hours.

Monkey Bread

2 cans (10 count) refrigerated biscuits
1/3 cup butter or margarine
1 1/2 tsps. cinnamon
3/4 cup brown sugar
1 tsp. vanilla

Cut each uncooked biscuit into 4 pieces and place half in a greased loaf pan.  In a saucepan, heat to a boil, the butter, cinnamon and brown sugar.  Remove from the heat and add the vanilla.  Pour some of the mixture on the biscuit pieces and then add the rest of the remaining biscuit pieces.  Pour the remaining sugar mixture on top.  Bake at 350 for 25-30 minutes.
