Ham Balls

3 lbs. ham loaf (Fareway)
2 eggs
1 1/2 cups crushed graham cracker crumbs
(one sleeve of crackers crushed)
1 cup milk

Sauce:
1 can tomato soup
1 tsp. dry mustard
1/4 cup vinegar
3/4 cup brown sugar

Mix ham loaf, eggs, graham cracker crumbs and milk. Roll into 2 inch balls and place in a 9x13 pan. Stir together sauce ingredients and spoon over meat balls. Bake at 350 for 1 hour and 15 minutes.

No Bake Cookies

2 cups sugar
1 stick margarine or butter
3 T. cocoa powder
1/2 cup milk
1/2 cup peanut butter
1 tsp. vanilla
3 cups oatmeal

Mix the sugar, margarine, cocoa, and milk in a medium saucepan. Boil for 1 minute. Add the peanut butter and vanilla. Mix quickly until the peanut butter melts, then add the oatmeal and mix until well blended. Drop spoonfuls on wax paper. Allow to set and cool completely.

Makes approximately 2 dozen 3-inch cookies.

Oreo Pudding

Mix together:
1 small box instant vanilla pudding
2 cups milk

Add 8 oz. Cool Whip
Then crush 6 -8 oreos and mix into pudding mixture.
Refrigerate at least a couple hours.
Before serving add crumbled oreos for garnish.

Waffles

1 3/4 cup all-purpose flour
1 T. baking powder
1 1/2 T. sugar
1/4 tsp. salt
1 3/4 cups milk
2 beaten egg yolks
1/2 cup oil
1 tsp. vanilla
2 egg whites whipped until stiff

Separate egg whites from yolks. In a large mixing bowl combine flour, baking powder, sugar and salt. Create a well in the center and pour milk, beaten egg yolks, oil and vanilla. Mix gently, just until combined. Beat eggs whites until stiff with electric mixer. Fold stiffened egg whites into mixture. Batter will be lumpy. Pour batter into preheated waffle (or belgian waffle) iron. Bake until desired color according to settings on waffle iron. ENJOY!
Makes 10-12 begium waffles or 12-14 regular waffles.

Banana Bread

1 pkg. yellow cake mix
1 box Banana Cream or Vanilla flavor instant pudding
4 eggs
1 cup water
1/4 cup oil
3 mashed fully ripe bananas
1/2 cup chopped walnuts (optional)

Beat first 5 ingredients in large bowl with mixer 2 minutes or until well blended. Add bananas and nuts; mix just until blended. Pour into 2 greased loaf pans and bake 50 - 60 minutes at 350 degrees.

*5 mini loaf pans can be used instead of 2 regular ones. Bake for 40 minutes.

Stuffed Pizza Bites

1 roll refrigerated pizza dough
pizza toppings of your choice
mozzarella cheese
1/2 tsp. garlic powder
1 tsp. Italian seasoning
parmesan cheese
1 T. melted butter
marinara or pizza sauce

Preheat oven to 400 degrees.
Unroll pizza dough so it's about 12" by 8" and cut into 24 squares. Place cheese and desired topping on each square (not the sauce though). Then carefully lift up each square and wrap the dough around the toppings. Pinch to make sure each ball is sealed shut and then place them seam side down in a lightly sprayed pie pan.
Brush the tops of the dough balls with melted butter and then sprinkle with the garlic and Italian seasoning and parmesan cheese.
Bake at 400 for 15 to 20 minutes. Sever with warmed marinara/pizza sauce on the side for dipping.

Chicken Noodle Soup

8 cups water
1 cup uncooked fine egg noodles
2 carrots, diced
2 celery stalks, diced
1 1/2 T. chicken-flavored bouillon
1/2 tsp. black pepper
1/4 tsp. dried thyme
1/8 tsp. celery seeds
1/8 tsp. garlic
2 bay leaves
4 T. minced onion
3 cups diced, cooked chicken

Put all ingredients into large pot, except chicken. Bring to boil. Cover and reduce to simmer for 15 - 20 minutes. Remove bay leaves and stir in chicken. Simmer or an additional 5 - 10 minutes.
